Food Safety Temperature Control: The Numbers to Know

Temperature is the single most powerful tool a kitchen has against harmful bacteria. Get the numbers right and you stop most food poisoning before it can start — here are the figures every Irish food handler should know.

Why temperature is everything

Most food poisoning is caused by bacteria multiplying to dangerous levels. Those bacteria need warmth to grow, which is why temperature control sits at the centre of food safety. Keep food cold enough and bacteria stay dormant; make it hot enough and you destroy them. The gap in between is where the trouble lies.

In Ireland, temperature control is a core requirement of food hygiene law under EC Regulation 852/2004 and forms one of the most common critical control points in any HACCP plan.

The danger zone

The temperature range in which bacteria multiply most rapidly is roughly between 5°C and 63°C — often called the danger zone. The aim of good practice is to move food through this range as quickly as possible and never to leave it sitting there. The longer food spends in the danger zone, the greater the risk.

Think of the danger zone as a clock that starts ticking the moment food enters it — your job is to keep that clock short.

The numbers that matter

A handful of figures cover the vast majority of day-to-day food safety decisions.

Chilled storage

Cold food should be kept at or below 5°C. Fridges and chilled display units should be set to hold this reliably, and they should be monitored, not assumed. Frozen food should be kept frozen solid, typically at around -18°C.

Cooking

Cooking thoroughly is what kills harmful bacteria. A widely used target is to ensure food reaches at least 75°C at its core, or an equivalent time-and-temperature combination. The centre of the thickest part is what counts, so check it with a clean, calibrated probe rather than relying on appearance.

Hot-holding

If you are keeping cooked food hot for service, it should be held at 63°C or above. Below this, bacteria can begin to multiply again, so hot-holding equipment must keep food genuinely hot, not merely warm.

Cooling and reheating

Food that is cooked and then cooled should be chilled quickly — getting it out of the danger zone fast — and then stored cold. When reheating, food should be brought to a high enough temperature throughout to be safe, and reheated only once. Slow cooling and lukewarm reheating are two of the most common causes of avoidable food poisoning.

Monitoring and records

Setting the right temperatures means nothing unless you check them. Regular monitoring — fridge temperatures, cooking probes, hot-holding checks — and honest record-keeping are how you prove control is actually happening. Using a probe thermometer properly

A probe thermometer is the most useful tool in temperature control, but only if it is used correctly. Insert it into the thickest part or the centre of the food, where heat penetrates last, and wait for the reading to settle. Clean and disinfect the probe between uses to avoid spreading bacteria from one food to another, and calibrate it regularly so you can trust the numbers it gives you.
